An absolute honour to have been commissioned to recreate the magnificent Belvoir Castle in edible form this Christmas.
Using hours of drone footage and detailed research, I spent two weeks crafting a four-foot-wide cake version of the historic landmark – complete with intricate turrets, sugar paste detailing and even gingerbread towers. One of the most complex projects I’ve ever undertaken, and quite possibly one that aged me 20 years!

I was thrilled to have taken part in Cake International in Birmingham, one of the biggest stages for cake artists.
Being surrounded by so much talent from across the UK and beyond was both inspiring and humbling. To have my work recognised, and to come away with awards, has been one of the most rewarding experiences of my baking journey.
This event challenged me creatively and technically, and gave me the chance to showcase the flair, precision, and passion I put into every piece. I can’t wait to start dreaming up my next edible masterpiece!
